This one is very easy and quickly done
Ingredients :
any vegetables you like – here i took and prepared in cut into brunoise
- red sweet pepper
- carrots
- courgette
- ½ eggplant
- some green beans
–> some oil and ghee into a heated pan adding
- 1 chopped onion
- 1 clove of garlic, chopped
- 2 small tumeric or curcuma (beware of your fingers, they’ll turn orange if not protected)
- slices ginger
- 2 teaspoons of Masala Curry
let it simmer for 3 – 4 minutes, then add the vegetables, let them take the heat for 5 minutes, then add a little bit of water and a can of coconut milk,
then add the Masoor Dal lentils let them take the liquid for about 30 minutes at medium-low heat
serve with white cream or yoghourt with lemon zests
