Veggie mushroom burgers

Last night I tried out some veggie burgers based on my inspiration where I replaced meat with a mushroom & eggplant mixture

For the meat replacement  you need :

  • 200g mushrooms ( chanterelle, shiitake, oyster or other forest mushrooms, they need to have a lot of flavour)
  • 1 medium eggplant
  • 2 big onions , all cut into small cubes

Put these, with salt and pepper, into the pan with olive oil and fry them until really crispy, all the water should have gone !!

Then put this mixture into a bowl, add breadcrumps and an egg until it becomes a kind of solid dough. Let this rest for at least 2 hours in the fridge so that the liquids are really soaked up. I added some chili pepper to spice them up, you can also use fajita or chilly con carne spice mix.
After two hours, you take them out of the fridge and form small round flat portions. To to make a super crisp breaded coating before frying,  put the patties through the trilogy

  1. flour
  2. egg with milk and then
  3. breadcrumbs.

I here normally use Panko breadcrumbs ( see here why )
and  they should look like this

Then heat Ayurvedic ghee in the pan to grill your burgers , after a while, they should look like this

 

 

To finish the burgers, you’ll need

 

  • Some burger buns, self made or bought,
  • 2 tomatoes thinly sliced,
  • some lettuce thinly sliced,
  • Smoothy guacamole in replacement for mayonnaise
  • Some onion slices

 

And the thing is done and I could look like this
